Sea bream (or whitefish) with clams

Ingredients

Makes one portion, scale as necessary

  • 1 portion of white fish (MSC certified hake, haddock or cod or look for ASC certified sea bream) 
  • 6 MSC certified clams
  • 30g chopped shallots
  • 50ml olive oil
  • 25ml white wine
  • 6 black olives
  • 12 cherry tomatoes, halved
  • 5g garlic
  • 1 spring of fresh thyme
  • 10 capers
  • 1 MSC certified anchovy fillet
  • Salt to taste

Method

  1. Heat a non-stock pan & add oil
  2. Place fillet of sea bream into the pan and cook skin side down until skin is crisp & 70% cooked
  3. Turn over & cook for 1 more minute & rest
  4. In the same pan, Fry off the garlic, shallots & anchovy with oil until caramelised and the anchovy is mixed in.
  5. Add the cherry tomatoes, capers, black olives and thyme.
  6. Introduce portion of washed fresh clams and add, along with white wine and allow to steam for 3 minutes by putting lid on the pan.
  7. Once cooked, place all ingredients in a large bowl and place cooked fish to one side.
