Ingredients
Makes one portion, scale as necessary
- 1 portion of white fish (MSC certified hake, haddock or cod or look for ASC certified sea bream)
- 6 MSC certified clams
- 30g chopped shallots
- 50ml olive oil
- 25ml white wine
- 6 black olives
- 12 cherry tomatoes, halved
- 5g garlic
- 1 spring of fresh thyme
- 10 capers
- 1 MSC certified anchovy fillet
- Salt to taste
Method
- Heat a non-stock pan & add oil
- Place fillet of sea bream into the pan and cook skin side down until skin is crisp & 70% cooked
- Turn over & cook for 1 more minute & rest
- In the same pan, Fry off the garlic, shallots & anchovy with oil until caramelised and the anchovy is mixed in.
- Add the cherry tomatoes, capers, black olives and thyme.
- Introduce portion of washed fresh clams and add, along with white wine and allow to steam for 3 minutes by putting lid on the pan.
- Once cooked, place all ingredients in a large bowl and place cooked fish to one side.
