Ingredients
- 900g live MSC certified Shetland mussels
- 8 spring onions, roughly chopped
- 2 garlic cloves, thinly sliced
- 150ml single cream
- Crusty bread, to serve
Method
- Start by checking the mussels are clean and unbroken. Tap each open mussel on a hard surface. If the mussel doesn’t close by itself, then discard.
- Once washed, set aside. Then, in a heavy bottomed pan heat the olive oil and sauté garlic and spring onions until soft.
- Add the mussels. Cover and cook for 3-4 mins or until the mussels start to open. Add cream and stir, season to your liking.
- Take out and throw away any unopened mussels.
- Divide into bowls and serve with crusty bread.
