Ingredients
- 12 sheets of MSC certified smoked salmon
- 1/2 a red onion, sliced thin
- 1/4 cup apple cider vinegar
- 2 sesame seed bagels, sliced into medallions
- 4 large eggs
- 1 clove garlic, minced
- 1 tbsp Dijon mustard
- 1 tsp honey
- 1/4 cup olive oil
- 1/2 tsp salt
- 142 g Mixed greens
- 1/4 cup capers
- Salt and pepper to taste
When shopping, look for the MSC blue fish label on your seafood to know it's sustainable.
Method
- Preheat the oven to 400°F.
- Place the onion in a bowl and cover with the vinegar. Set aside to pickle.
- Place bagel slices on a baking sheet and drizzle with olive oil and sprinkle with salt. Transfer to the oven and toast for 10 minutes.
- Bring a pot of water to boil and add the eggs. Reduce the heat until the water reaches a simmer. Cook for 7 minutes before transferring to an ice bath. Let sit for 10 minutes before peeling and slicing.
- In a bowl, whisk to combine the garlic, Dijon mustard, honey, olive oil, the vinegar from the onions, and salt. Pour the mixture over the greens and toss to coat.
- Top the greens with smoked salmon, bagel chips, eggs, onions, and capers. Serve immediately.
