Ingredients
- 1 can of MSC certified sardines in oil
- 1 cup black whole beans (cooked)
- ½ cup sliced red onion
- 2 tbsp chopped fresh serrano chili
- ½ cup lime juice
- 1 cup chopped tomatillo
- ½ cup coarsely chopped cilantro
- Pinch of artisan salt
- 8 corn tortillas
- 1 avocado
- 1 cup fresh cilantro (for topping)
Method
- In a medium bowl, mix the onion, chili, and cilantro with lime juice and a generous pinch of salt. Set aside and let it marinate for 10 minutes.
- While the onion marinates, remove the spines of the sardines (if present) and roughly chop the filets, keeping the oil from the can.
- Add the beans and tomatillo to the bowl with the onion, chili, cilantro, and lime. Mix everything together, and then add the chopped sardines. Stir gently to combine.
- On the stove, put the tortilla directly on the fire and let it char on the sides, or toast in a pan until crispy.
- To serve: put the sardine mix on top of the tostada, add a slice of avocado, a dash of salt, and garnish with fresh cilantro.
