Ingredients

Tuna Mix:

  • 3 x 185g can MSC certified tuna in olive oil (drained) - look for the MSC blue fish tick label
  • 6 tbsp mayo (Kewpie or Best Foods)
  • 3 tsp Sriracha
  • 3 tsp Dijon mustard
  • 3 tbsp red onion (finely chopped)
  • 3 tbsp chives
  • 3 tbsp flat-leaf parsley
  • 6 tbsp chopped pepperoncini or pickled jalapeños
  • Salt + cracked black pepper to taste

 

The Melt:

  • 12 slices sourdough or brioche, lightly toasted
  • 3 large tomatoes, sliced & salted
  • 3 cups grated aged cheddar + mozzarella
  • Butter for toasting

Method

  1. Mix all tuna ingredients until creamy with texture.
  2. Butter the outside of each bread slice.
  3. Inside: tuna mix > tomato slices > grated cheese.
  4. Toast in a skillet on medium heat until golden and melty on both sides.
  5. Slice in half, serve hot, let the cheese pull do its thing.
