Ingredients

  • 125g can MSC certified John West Salmon Slices - Smoked (look for the MSC blue fish tick label)
  • 300g spiral pasta, uncooked
  • 1 small red capsicum, diced
  • 1 small yellow capsicum, diced
  • 10 semi sun-dried tomatoes, diced
  • 1/2 cup kalamata olives
  • 1/2 red onion, diced
  • 15 basil leaves, sliced
  • ¼ cup marinated artichokes
  • ¼ cup feta cheese, crumbled

Dressing:

  • 2 tbsp olive oil
  • 2 tbsp rice wine vinegar
  • 1/4 tsp salt
  • 2 x 85g cans ASC certified John West Smoked Oysters in Oil (Optional)

Method

  1. Cook pasta according to packet instructions. Leave to cool. 

  2. Add cooked pasta and all other ingredients into a large mixing bowl and mix well. This is your base for the pasta salad. Here you can add any other ingredients that you like (for example cherry tomatoes, fresh oregano etc). 

  3. In a small blender, add all the dressing ingredients together and stir. Pour over salad and season to taste.
