We teamed up with MSC supporter chef Courtney Roulston to provide you with some time-saving tips for storing seafood this Christmas.
Courtney says, always store raw prawns in some iced water in a bowl in the fridge. This prevents them from oxidising and keeps them fresh.
For crispy skin on fish, I like to leave the fillets of fish on a try just loosely covered with a Chux cloth skin side up. This is a similar process to getting crispy pork crackle. Having the fish skin dry means you will get really crunchy skin when cooking it.
