How to cook lobster on the BBQ
Western Australian rock lobsters are prized for their sweet tender and delicate meat and toughened up when cooked too hot for too long.
- Cook your lobster shell down: My top tip for BBQing lobster is to cook your lobster shell side down on low to medium heat. This low, slow, and softer cooking technique gives the best result and will ensure you don't toughen up and the meat stays tender and juicy. If you're not firing your BBQ up this summer you can cook your lobster in the oven at around 130-140 degrees.
- Partially blanch your lobster: My next tip is if you're in a hurry is to partially blanch your lobster before BBQing them. This is a fantastic way to ensure you get the perfect lobster meat quick. To do this, bring a large pot of salted water to a boil (you want your salted water to taste like the ocean). Add your lobster and cook for 5-10 minutes until the shell has changed colour. Remove your lobster and transfer it into another bowl filled with ice water. Once your lobsters cooled enough to handle, remove the tail, chop it in half and add it to the BBQ as per tip 1
- Let the lobster rest: My third tip is a simple yet super important one, Let Your Lobster Rest! Lobster is meat and is best eaten once it has rested for a few minutes after cooking.
How to get all the meat our of your lobster
- Remove the tail by cutting back towards the head and around and around the tail joint, twist with a little force and the tail meat will pop out.
- Don't throw away the head and shells - keep it for stock, soups and sauces. If you're using it at a later stage they freeze really well.
