Ingredients
- 2 cans of MSC certified tuna
- 5 baby cucumbers thickly chopped
- 5 baby carrots – rinsed and set aside
- Small packet of radish – rinsed and set aside
- 5 eggs – cooked to desired preference
- Small punnet baby tomatoes – rinsed and set aside
- Small bunch of asparagus – blanch for 3 minutes
- 5 baby sweet potatoes - boil until soft and set aside
- 1 cup kalamata olives
- 1 packet mixed lettuce leaves
Salad Dressing
- 1 Tablespoon whole grain mustard
- ¼ cup red wine vinegar
- 2 tablespoons honey
- 1 cup olive oil
- Juice and rind of 1 lemon
- 1 small bunch chives – finely chopped
- Salt and pepper to taste
Method
- Drain the tuna and set aside
- Combine all the salad dressing ingredients and mix until well combined
- Generously pour over the salad dressing and serve
- Adjust seasoning according to taste
