Air Fried Garlic Tuna Nuggets with Lemongrass and Lime Leaves

Ingredients

185g MSC-certified canned tuna chunks (in extra virgin olive oil)
40g garlic, diced
40g shallots, diced
4 pieces kaffir lime leaves, finely sliced
3g lemongrass, finely sliced
1 egg
Salt
Black pepper

Method

  1. Finely dice the garlic and shallots, then portion out 10g of the garlic to be used later. In a pan, heat some oil over medium heat, add the chopped garlic (30g) and shallots, and stir-fry until golden brown and fragrant. Set aside to cool.

  2. Place the MSC-certified tuna chunks into a mixing bowl, along with the fried garlic and shallots, kaffir lime leaves, lemongrass, 1 egg, and a pinch of salt and pepper. Gently mix to incorporate all the ingredients, ensuring not to over-mash the tuna. Taste a small piece of the mixture and adjust the seasoning with more salt and pepper if necessary.

  3. Roll the mixture into small balls and press them onto the remaining diced garlic. Place them into the air fryer basket, ensuring they are evenly separated.

  4. Then smash a handful of skin-on garlic cloves and scatter them on top.

  5. Spray or brush some oil over the tuna nuggets and air fry at 160°C for 10 minutes, or until the top is nicely browned.

  6. Once ready, plate the tuna nuggets along with the roasted garlic and serve.
